Religious Tradition of the Filipinos. Traces back to Mexico in 1587. Originally known to Tagalog as Simbang Gabi or "Dawn Mass." Faithful would wake early for nine days before Christmas to join in the celebration of the dawn Mass. Many parishes celebrate around 7 p.m. today. No matter how or when this celebration takes place, the annual Simbang Gabi provides a strong indication of the depth of Catholicism in the hearts of Filipinos and many others who have joined in the celebration. Traditional Filipino food is served after Mass.
